Why day-three leftovers hit me so hard

spent ages thinking certain foods were safe because i’d eat leftovers on day one and feel fine. completely forgot about day three or four sitting in the fridge. finally connected it: rice and chicken that’s been in there 72+ hours hits me with flushing and hives faster than the same meal made fresh. tried isolating if it was the rice, the chicken, or the combo.

turned out to be the time. same meal made monday, eaten wednesday? racing heart and dermographism all over by evening. made wednesday, eaten wednesday?

nothing. idk if it’s my DAO enzyme being too weak to handle histamine accumulation or if i’m just tracking something else entirely. either way, i’m basically done eating from the back of the fridge. has anyone else found that how long leftovers have been sitting matters way more than the food itself?

or am i just weirdly sensitive to older food?
