i spent a year testing aged cheese and cured meats thinking i was carefully exploring my tolerance. eat it, feel fine, count it as safe. extremely logical approach to expanding my diet, except it doesn’t work at all with how my mast cells respond. the problem: aged stuff (anything fermented or sitting in the fridge past a day or two) doesn’t hit me immediately. there’s a 3-4 hour lag. so i’d eat dinner at 6pm feeling smug about my expanded diet, then 9pm rolls around and my face is flushed, hives all over my arms, racing heart, stomach cramping. by then i’ve completely disconnected it from the cheese i ate three hours ago. switched to fresh or frozen and immediate reactions became obvious. ate something at 6pm, reaction at 6:45pm. tbh clear cause and effect. way more restrictive (no leftovers after one day, no aged anything), but at least i’m not slowly poisoning myself while thinking i’m fine. the delayed response made every tolerance test impossible. everyone talks about finding your window but they don’t mention the lag that obliterates it. does anyone else have this 3-4 hour gap before histamine hits, or is my response just slow? imo.
