My labs came back normal. my skin didn't

so my baseline labs came back. tryptase 3.2, totally normal. allergy panel fine. but i’m still getting 3-4 flares a week.

dermographism is bad (scratch my arm and welts show up in seconds), flushing after certain foods, skin randomly going haywire. my allergist kind of shrugged. said if my labs are normal, probably not mcas. but high-histamine foods clearly trigger me.

aged cheeses, fermented stuff. h1/h2 blockers help. cromolyn helps. started logging everything in detail: what i eat, triggers, timing.

there’s clearly a pattern but nothing in the labs. feel like i’m either missing something or the tests aren’t catching what’s actually happening. has anyone else had normal tryptase but obvious mcas symptoms? what actually changed once your doc caught what your labs missed?
