I finally figured out something stupid that was right in front of me. i’ll make chicken and rice, eat it fresh day one - totally fine. same meal day two out of the fridge and i get flushing, hives, the whole dermographism thing kicks in. same food, different day.
turns out? histamine buildup. the longer food sits in the fridge, the more histamine accumulates. bacteria keep breaking down amino acids, histamine keeps rising.
day two is worse than day one. day three is… don’t even. This actually explained a weird pattern - I thought I was fine with chicken until I realized I’d only been eating it fresh-cooked.
the moment we had leftovers? Flare. H1 blocker didn’t touch it. DAO helps a bit but doesn’t stop it completely if the meal’s already loaded.
Now I basically don’t keep leftovers past 24 hours, and I’m way more careful about what I reheat. I eat a lot of truly fresh stuff instead. Has anyone else clocked this with specific foods? Like, does your tolerance change based on how long something’s been sitting?
I’m curious if it’s just chicken and rice or if I should be avoiding other leftovers too.
